Either the day before or morning of the distillation, the three botanicals are added to the pot and macerated in 60% GNS. Finish - Initially oily and mouth coating with juicy and rich orange zest and lemon pith then a bold emergence of black pepper and cardamom, tempered with tapered herbaceous smoothness. To create Height of Arrows we employed the same principles, focusing on juniper as our sole botanical only using additional ingredients to intensify flavours and our gin’s texture. The distillery sits in the shadow of Arthur’s Seat that stands at 251 metres above Edinburgh’s old town. The only differences are the ratios of botanicals and for Heavy, the addition of sugar after distillation to create an Old Tom style gin. Our New Make Spirit showcases our whisky vision and enables whisky drinkers to fully appreciate spirit before it enters a cask.
